Cinnamon Mashed Sweet Potato with Cobbler Fillet and Spinach

As promised, I’ll  be posting some of my meals that have been contributing to my ‘healthy lifestyle’ and skincare.

Cinnamon is a small spice that boasts enormous health benefits. You don’t have to like cinnamon to reap its health benefits, adding a little bit of it to your favorite meal will be enough.

I was really happy to learn that sweet potatoes are good for skin. They are high in vitamins A and C, which are both essential for glowing and healthy skin. The thing is, vitamin C increases collagen production that keeps your skin supple and smooth, and vitamin A is a potent antioxidant that fights free radical damage and prevents skin cancer. I think it’s a great reason to add sweet potatoes to your eating plan.

Spinach is a nutrient-rich food you should definitely include into your eating plan. It’s an excellent source of Vitamin E, iron, chlorophyll, folate, magnesium, fiber, Vitamin A, Vitamin C and plant protein, which are all great for your skin. Spinach is also packed with antioxidants that help prevent different types of skin problems. You can use spinach in your green smoothies or add it to your salads. Eating spinach regularly will help clean your skin from the inside out.

I made this for lunch the other day!

‘Cinnamon Mashed Sweet Potato with Smoked Cobbler Fillet on a bed of Creamy Spinach’


1 sweet potato
1 smoked cobbler fillet
Frozen spinach
Salt and pepper
Coconut oil

For the sauce
1 tbspn organic butter
1 tbspn flour mixed into a paste with water
Cheddar cheese
Feta cheese
1 tbspn philadelphia cheese (original)
Almond milk
Cayenne pepper
Ground cumin
Salt and pepper

How to:

Heat the pan, add the coconut oil and heat. Add the fillet and leave till cooked through on both sides. Add pepper.

Melt the butter on a low heat . Add the cheeses and milk. Wait till its all melted. In the meantime, steam the spinach till its cooked. Add to the sauce. Add the spices.

Poke the sweet potato and put it on a microwavable plate. Microwave till cooked. Once cooked, remove skin and mash with a little organic butter.

Plate the sweet potato and sprinkle cinnamon on top. Add the spinach and top with the cobbler.
